With production representing 90% of all PDO certified Val di Mazara oil, Bono is the definitive name in Sicilian olive oil excellence. The Protected Designation of Origin (PDO) certification for Val di Mazara oil is among the most stringent in the olive oil world. Guaranteed by the Italian Ministry of Agriculture, this regulation ensures that olives originate exclusively from the Val Di Mazara Region spanning western Agrigento province and the entire province of Palermo. The entire process from cultivation to bottling is monitored by Agroqualità, a government-controlled certifying body, ensuring authenticity and quality at every step. Bono's exceptional oils are produced from prized Sicilian olive varieties including Biancolilla, Nocellara del Belice, and Cerasuola - varietals renowned for creating complex, flavourful extra virgin olive oil. With acidity levels of just 0.2-0.4%, Bono oils deliver a well-balanced, robust flavour profile characterised by fruity and peppery notes that enhance any dish. The PDO regulations require a maximum 22% yield, ensuring only the finest oil reaches consumers. The scale of Bono's operation is remarkable - their Sicilian mill processes fifteen thousand tons of pressed olives with a capacity of five tons per hour and 8,000 tons of oil storage. This infrastructure allows Bono to maintain consistent quality across organic and conventional ranges.
