Edmond Fallot is the last independent mustard producer in the Dijon region, maintaining traditional production methods since 1840. This family-owned Burgundy company was founded in Beaune near Dijon, France's historic centre of mustard-making, and was purchased by Edmond Fallot in 1928. Today, the company is run by Marc Désarménien, grandson of Edmond Fallot, preserving over 180 years of artisan mustard heritage. Unlike industrial production methods, the stone mill doesn't heat the mustard seeds during processing, preserving all the natural flavours and heat.
