Goatsbridge Trout Farm is one of Ireland's finest food producers, a family business established in 1961 in the beautiful Nore Valley, County Kilkenny. What began when Padraig Kirwan created the first fish ponds on the Little Arrigle River has grown into Ireland's leading trout producer. Now run by Ger and Mag Kirwan, Goatsbridge has expanded to six farms across Kilkenny and Wicklow, producing 500 tonnes of premium trout annually. In 2012, they developed Ireland's first and only trout caviar with support from BIM, adding a unique luxury product to their range. The Goatsbridge smoked rainbow trout is expertly prepared in their own smokery, delivering delicate flavour and silky texture. Their trout caviar, a beautiful red colour containing 97% freshwater rainbow trout eggs and 3% salt, offers an elegant, more accessible alternative to traditional caviar with a mild, delicate flavour that pairs well with many dishes.
