Founded in 2004 by Maurice Kettyle, the company has pioneered a unique Salt Moss dry-ageing process that produces exceptionally flavourful and tender Irish grass-fed beef. The innovative Salt Moss Dry Ageing Chambers feature walls of handcrafted salt bricks made from Virgin Organic Irish Sea Salt, held together with Carrageen (Irish Organic Seaweed) as a natural binder. Meat is aged for 28 days in these hygroscopic chambers, which naturally draw and manage moisture while maintaining optimal dry-ageing conditions through high potassium levels. Kettyle sources 100% of its meat from Bord Bia approved Irish farms, working with grass-reared Aberdeen Angus, Hereford, and Dexter breeds for consistent quality and tenderness. Irish grass-fed beef is renowned worldwide for being nutrient-rich with fewer calories, greater Omega fatty acids, and higher levels of Vitamins A, E, and essential micronutrients.
