About Rubies in the Rubble
Rubies in the Rubble is a pioneering British condiments brand founded by Jenny Costa in 2012, dedicated to fighting food waste by transforming surplus "wonky" fruit and vegetables into delicious ketchups, relishes, and vegan mayonnaise. The produce used isn't wasted because it tastes different - it's simply the wrong shape, size, or colour for supermarket shelves. Jenny first became concerned about food waste after reading about the problem and witnessing it firsthand at London markets, where perfectly good produce was being discarded. She began rescuing surplus vegetables and experimenting with old family recipes in her kitchen, eventually creating a business that now works with around ten large farms across the UK. The brand's signature Tomato Ketchup is sweetened with surplus and wonky pears, containing twice the fruit and half the refined sugar compared to leading brands. Their Great Taste Award-winning Banana Ketchup offers a unique twist, perfect as a standard ketchup, dip, or curry accompaniment. The Vegan Mayo range is made using surplus aquafaba - the nutrient-rich water left over from cooking chickpeas that would normally be discarded. Sustainability extends to packaging: their squeezy bottles are made from 100% post-consumer recycled plastic waste. Rubies in the Rubble is a Certified B-Corp, recently celebrating recertification with an improved score from 80.9 to 95.8, demonstrating their commitment to social and environmental responsibility. Over a third of all food grown in the UK never reaches plates - 1.3 million tonnes annually, with the majority lost at farm level. Rubies in the Rubble addresses this by creating premium condiments sold at Tesco, Waitrose, Co-op, Ocado, Selfridges, Fortnum & Mason, and Whole Foods Market.
