About Franco Manca
Franco Manca is a beloved UK pizza chain founded in 2008 in Brixton Market by Giuseppe Mascoli and Bridget Hugo. The name means "Franco is missing" in Italian, a nod to Franco who originally founded the pizzeria in 1986 before passing it on. The brand became a pioneer of the Neapolitan pizza movement in London. What sets Franco Manca apart is their authentic slow-rising sourdough, created from an 18th century starter sourced near Giuseppe's hometown of Naples. The dough ferments for at least 24 hours, delivering the distinctive light, airy texture and slight tang that characterises true Neapolitan pizza. From its humble Brixton Market beginnings, Franco Manca has grown to around 70 UK sites. The chain is now owned by Japanese company Toridoll.
