Ingredients: 3 bell peppers, 300g Napolina Farfalle, 3 tbsps basil pesto, 1 tbsp Napolina olive oil, 1 tbsp lemon juice, salt & pepper, 120g cherry tomatoes, halved, 120g pitted black olives, chopped, 2 tbsps capers and small bunch of flat leaf parsley. Serves: 4 Cook Time: 30 mins Method: - Preheat the grill. Place the peppers on a non-stick baking pan then turning as necessary, grill the peppers on all sides until quite charred. This will take about 15 - 20 minutes. Transfer to a plate, cover with clingfilm and leave until cool enough to handle. - Peel the skins from the peppers and remove the stalks and seeds, reserving any juices. Slice into chunky strips and set aside. - Cook the Farfalle in salted boiling water until al dente. Drain, rinse under cold water and transfer to a salad bowl. - In a separate bowl whisk the pesto dressing with the olive oil, lemon juice and salt and pepper.
