Chickpea, Carrot & Pea Falafel
Vegetarian
These are loaded with plant protein from chickpeas. This recipe is exploding with flavour from the fresh herbs to the fragrant spices. They could be used in salads too, or even in a pitta for an on-the-go lunch.
Prep Time: 5 minutes
Cook Time: 25 minutes
Serves 15 people
INGREDIENTS:
30g Oats
1½ tsp Cumin
1 tsp Salt
½ tsp Ground coriander
½ tsp Mild curry powder
¼ tsp Cayenne pepper
15g Fresh parsley
15g Fresh coriander
2 tsp Epicure Chopped Garlic
2 jars Epicure Chickpeas in Salted Water, drained and patted dry
1 tin Epicure Petit Pois & Baby Carrots In Water, drained and patted dry
METHOD:
Preheat the oven 200C. Line a baking tray with baking paper and set aside.
Add all the ingredients to a food processor and pulse until the batter comes together.
Take approximately two tablespoons in your hands and roll it into a falafel patty. Place the patty on the baking tray and repeat with the rest of the batter until you have about 15 falafels.
Bake the falafel in the oven for about 25 minutes, until golden brown and nice and crispy on the outside.
Serve the falafel warm with tahini yoghurt or tzatziki.
TIP:
If you rub a little oil in your hands when rolling the falafel, the mixture shouldn't stick to your fingers!
