The cheese is a pasteurized, hard cheddar made from cow's milk with a distinctively creamy taste. While the brand originated in Coleraine, production now takes place primarily at a factory in Portadown, County Armagh, where the cheese ages for 3-4 months depending on variety. The Coleraine factory now specialises in processed cheese slices. The brand is part of the Kerry Group (Dairy Produce Packers Ltd of Coleraine) and offers a comprehensive range including Mature White Cheddar, Medium Cheddar, and Mild White Cheddar, each available in convenient block, sliced, and grated formats.
