Founded in 1968 in Galliera Veneta near Padua—a region of northern Italy renowned for its agricultural and artisanal heritage—the company began as a specialist wafer biscuit producer under the name Elledi before rebranding to honour its passionate founder, Gastone Lago. The founder's dedication to quality and his belief in his team transformed a small artisan operation into an internationally recognised symbol of Italian confectionery excellence. Under his guidance, Elledi played a fundamental role in growing the wafer category in Italy, with Gastone Lago himself responsible for developing the excellent cream and wafer recipes that define the brand's quality reputation. From its wafer origins, Gastone Lago expanded into ladyfingers (Savoiardi), cookies, tartlets, and doughnuts.
