About Black Cow
Black Cow is the world's first pure milk vodka, launched in 2012 from a 13th-century manor distillery in West Dorset. Created by dairy farmer Jason Barber and artist Paul Archard after five years of experimentation, this innovative spirit transforms surplus cheese whey into award-winning vodka. The Barber family's dairy heritage spans 10 generations and 300 years of farming. They've been making Cheddar cheese since 1833, making them the world's oldest surviving Cheddar cheesemakers. Jason's inspiration came after switching to vodka in 2002 to avoid red wine hangovers during early morning milking, leading him to wonder if he could distill spirits from milk. The production process begins by separating milk into curds and whey. While the curds become Black Cow Deluxe Cheddar, the sugar-rich whey undergoes a secret distilling process. Approximately twenty litres of milk produce just one litre of vodka, creating an exceptionally smooth, creamy spirit unlike any other. Black Cow's innovation was inspired by Araka, the fermented mare's milk allegedly consumed by Genghis Khan's armies.
